In the Winter 2012 issue of the Quarterly, we interviewed sisters Penny Folley Miller '62 and Gillian "Gill" Folley White '73 about their adventures in hunting big game (see p. 38). Penny and Gill recommend this marinade for elk or moose (or chicken or beef for the less adventurous). One batch will season about 4 pounds of meat in two to three hours:

Penny's Marinade

½ cup chopped onion
½ cup lemon juice
¼ cup salad oil
¼ cup Worcestershire sauce
¼ cup soy sauce
1 clove garlic
½ teaspoon each of pepper, thyme, rosemary, and sage

Gill's variation: add juniper berries for notes of citrus
